Ingredients

  • 1 generous cup raw hazelnuts
  • 1 1/2 tsp hazelnut extract
  • 1/4 tsp vanilla extract
  • 3/4 cup powdered sugar
  • 1/4 cup unsweetened cocoa powder, regular or Dutch
  • 6-10 tbsp peanut oil

Steps

  • Heat the oven to 300 degrees F.
  • Toast the hazelnuts for 8-10 minutes until fragrant and the skin begins to peel.
  • Straight out of the oven, roll the hazelnuts in a course dish towel and rub them vigorously to remove the skins.
  • Pulse the hazelnuts in a food processor until they form an oily paste, similar to marzipan.
  • Stop often to scrape down the sides of the food processor.
  • Add the extracts, sugar, and cocoa powder and pulse to combine.
  • Add 4 tbsp (1/4 cup) of oil, continuing to pulse and scrape.
  • Drizzle in oil, one tbsp at a time, until the desired consistency is reached.
  • Store in the refrigerator.
