510 g (1 3/4 cup) salt

255 g (1 1/4 cup) granulated sugar

4 egg yolks
Steps
- Whisk together the salt and sugar and pour half into a container with a lid.
- Use a spoon to make divots in the mixture and place the yolks in the divots.
- Cover with the remaining salt and sugar mixture, and refrigerate for 4 days.
- Carefully rinse off the yolks and dry them completely.
- Using an oven or dehydrator, dry them at 150 degrees F for two hours.
