Cured Egg Yolks

Ingredients

  • 510 g (1 3/4 cup) salt
  • 255 g (1 1/4 cup) granulated sugar
  • 4 egg yolks

Steps

  • Whisk together the salt and sugar and pour half into a container with a lid.
  • Use a spoon to make divots in the mixture and place the yolks in the divots.
  • Cover with the remaining salt and sugar mixture, and refrigerate for 4 days.
  • Carefully rinse off the yolks and dry them completely.
  • Using an oven or dehydrator, dry them at 150 degrees F for two hours.
