7 1/2 tablespoons butter

2 eggs

100 grams superfine sugar

1 tablespoon honey

Zest of 1 lemon

100 grams all-purpose flour

2/3 teaspoon baking powder
Steps
- Grease and flour two madeleine pans, and put them in the freezer.
- In a saucepan, brown the butter and pour into a separate container. Set it aside to cool to room temperature.
- In a stainless steel bowl, blanch the eggs, sugar, and honey with a whisk.
- Slowly add the flour, baking powder, and lemon zest.
- Add the cooled butter.
- Cover the bowl and let the batter rest overnight in the refrigerator.
- When you're ready to bake, preheat the oven to 430 degrees F.
- Spoon or pipe the batter into the prepared pans, and put them in the oven.
- Immediately reduce the oven temperature to 340 degrees F.
- Bake for 10-15 minutes, until the edges are browned.
- Allow to cool completely on a wire rack.
