Ginger Wafer Cookies

Ingredients

6 tbsp butter

3/4 cup brown sugar

1/3 cup molasses

1 egg yolk

1 tsp vanilla extract

1 3/4 cup all-purpose flour

1 tbsp ground ginger

1 tsp cinnamon

1/2 tsp baking powder

1/2 tsp salt

1/4 tsp ground cloves

Turbinado sugar
Steps
- Cream the butter and sugar until fluffy.
- Beat in the molasses, yolk, and vanilla.
- Blend in the flour, spices, baking powder, and salt with a rubber spatula until just combined. The mixture will remain crumbly.
- Roll one third of the dough between sheets of parchment paper until very thin (1/16 of an inch).
- Freeze the dough for 30 minutes.
- Preheat the oven to 325 degrees F.
- Remove the rolled dough from the freezer, cut the cookies, and arrange on a baking sheet.
- Bake for 11-12 minutes.
- Sprinkle turbino sugar on top while the cookies are still hot.
- Repeat with the remaining dough.
