Ginger Wafer Cookies

Ingredients

  • 6 tbsp butter
  • 3/4 cup brown sugar
  • 1/3 cup molasses
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 3/4 cup all-purpose flour
  • 1 tbsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp ground cloves
  • Turbinado sugar

Steps

  • Cream the butter and sugar until fluffy.
  • Beat in the molasses, yolk, and vanilla.
  • Blend in the flour, spices, baking powder, and salt with a rubber spatula until just combined. The mixture will remain crumbly.
  • Roll one third of the dough between sheets of parchment paper until very thin (1/16 of an inch).
  • Freeze the dough for 30 minutes.
  • Preheat the oven to 325 degrees F.
  • Remove the rolled dough from the freezer, cut the cookies, and arrange on a baking sheet.
  • Bake for 11-12 minutes.
  • Sprinkle turbino sugar on top while the cookies are still hot.
  • Repeat with the remaining dough.
