Ingredients
- 185 g (1 2/3 cup) rolled oats
- 60 g (1/2 cup) oat flour
- 60 g (1/3 cup) brown sugar
- 1/2 teaspoon salt
- 2-3 cups dried fruit, nuts, and seeds, or:
- 100 g (1/2 cup) dried apricots, chopped
- 75 g (1/2 cup) almonds
- 35 g (1/4 cup) flax seeds and meal
- 35 g (1/4 cup) pumpkin seeds
- 35 g (1/4 cup) candied ginger
- 1 teaspoon vanilla extract
- 6 tablespoons melted butter
- 85 g (1/3 cup) honey or corn syrup
- 1 egg
Steps
- Preheat the oven to 350 degrees F and line a 9x13 inch pan with parchment paper.
- Mix together dry ingredients.
- In a separate bowl, beat together the wet ingredients.
- Mix the wet ingredients into the dry ingredients until fully moistened
- Spread the mixture into the pan and gently press down.
- Bake for about 25 minutes, until browned at the edges.
- Allow to cool in the pan for 5 minutes, then remove and cut, allowing to cool on a wire rack.
