Granola Bars

Ingredients

  • 185 g (1 2/3 cup) rolled oats
  • 60 g (1/2 cup) oat flour
  • 60 g (1/3 cup) brown sugar
  • 1/2 teaspoon salt
  • 2-3 cups dried fruit, nuts, and seeds, or:
  • 100 g (1/2 cup) dried apricots, chopped
  • 75 g (1/2 cup) almonds
  • 35 g (1/4 cup) flax seeds and meal
  • 35 g (1/4 cup) pumpkin seeds
  • 35 g (1/4 cup) candied ginger
  • 1 teaspoon vanilla extract
  • 6 tablespoons melted butter
  • 85 g (1/3 cup) honey or corn syrup
  • 1 egg

Steps

  • Preheat the oven to 350 degrees F and line a 9x13 inch pan with parchment paper.
  • Mix together dry ingredients.
  • In a separate bowl, beat together the wet ingredients.
  • Mix the wet ingredients into the dry ingredients until fully moistened
  • Spread the mixture into the pan and gently press down.
  • Bake for about 25 minutes, until browned at the edges.
  • Allow to cool in the pan for 5 minutes, then remove and cut, allowing to cool on a wire rack.
