Kale sauce pasta

Ingredients

  • 1/4 cup olive oil
  • 3 cloves of garlic
  • 1 pound lacinato kale, de-boned
  • Salt and pepper
  • 1/2 pound pasta
  • 3/4 cup coarsely grated parmesan

Steps

  • Boil generously salted water in a large pot.
  • While the water is heating, sauté the garlic with oil on low heat until its soft and golden.
  • When the water is boilding, add the kale leaves and cook until tender, about 5 minutes.
  • Transfer the kale to a blender without draining the pot, and add the garlic and oil. Blend until smooth.
  • Add the pasta to the boiling water and cook as directed.
  • Set aside a cup of the pasta water and strain the rest.
  • Add the kale purée and cheese to the pasta pot and toss until coated, adding the leftover water as needed.
