Kale sauce pasta

Ingredients

1/4 cup olive oil

3 cloves of garlic

1 pound lacinato kale, de-boned

Salt and pepper

1/2 pound pasta

3/4 cup coarsely grated parmesan
Steps
- Boil generously salted water in a large pot.
- While the water is heating, sauté the garlic with oil on low heat until its soft and golden.
- When the water is boilding, add the kale leaves and cook until tender, about 5 minutes.
- Transfer the kale to a blender without draining the pot, and add the garlic and oil. Blend until smooth.
- Add the pasta to the boiling water and cook as directed.
- Set aside a cup of the pasta water and strain the rest.
- Add the kale purée and cheese to the pasta pot and toss until coated, adding the leftover water as needed.
