Chickpeas

Ingredients

  • 1 onion, diced (red is good)
  • 1 inch ginger, minced
  • 3 cloves garlic, minced
  • 1 Serrano pepper or chili flakes
  • 2 cups cooked chickpeas
  • Additional vegetables, such as steamed cauliflower, mushrooms, or greens.
  • Approximately 3 tablespoons tomato paste
  • 2 tablespoons coconut cream
  • 1 tsp black mustard seed, toasted and ground
  • 1/2 tsp fenugreek seed, toasted and ground
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp turmeric
  • Pinch of asafetida

Steps

  • Sauté the onion in plenty of oil on medium low heat, without browning, until translucent.
  • Add ginger, garlic, and pepper, and cook for another few minutes.
  • Add veggies, if using, and spices and cook for another minute.
  • Add chickpeas and just enough water to prevent sticking.
  • Add tomato paste to taste, and more water as needed.
  • Stir in coconut cream and asafetida, and simmer, covered, for another 10 minutes.
