Chickpeas
Ingredients
- 1 onion, diced (red is good)
- 1 inch ginger, minced
- 3 cloves garlic, minced
- 1 Serrano pepper or chili flakes
- 2 cups cooked chickpeas
- Additional vegetables, such as steamed cauliflower, mushrooms, or greens.
- Approximately 3 tablespoons tomato paste
- 2 tablespoons coconut cream
- 1 tsp black mustard seed, toasted and ground
- 1/2 tsp fenugreek seed, toasted and ground
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp turmeric
- Pinch of asafetida
Steps
- Sauté the onion in plenty of oil on medium low heat, without browning, until translucent.
- Add ginger, garlic, and pepper, and cook for another few minutes.
- Add veggies, if using, and spices and cook for another minute.
- Add chickpeas and just enough water to prevent sticking.
- Add tomato paste to taste, and more water as needed.
- Stir in coconut cream and asafetida, and simmer, covered, for another 10 minutes.
