Ingredients
- 100 g (1/2 cup) granulated sugar
- 105 g (1/2 cup) brown sugar
- 1 tablespoon all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cumin
- 1 tablespoon fresh ginger, pureed
- 425 g (1 can) pumpkin puree
- 283 g (1 1/14 cup) coconut cream
- 3 eggs
Steps
- Whisk together the dry ingredients.
- In a stand mixer, beat together the wet ingredients and add the dry.
- Rest overnight.
- Prepare and blind bake a crust.
- Bake at 400 degrees F for 45-50 minutes, until the edges are set but the center remains wobbly`.
