Masala Pumpkin Pie

Ingredients

  • 100 g (1/2 cup) granulated sugar
  • 105 g (1/2 cup) brown sugar
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cumin
  • 1 tablespoon fresh ginger, pureed
  • 425 g (1 can) pumpkin puree
  • 283 g (1 1/14 cup) coconut cream
  • 3 eggs

Steps

  • Whisk together the dry ingredients.
  • In a stand mixer, beat together the wet ingredients and add the dry.
  • Rest overnight.
  • Prepare and blind bake a crust.
  • Bake at 400 degrees F for 45-50 minutes, until the edges are set but the center remains wobbly`.
