Khoresh-e Holu

Ingredients

  • 1 batch seitan chicken
  • 4 firm, slightly underripe peaches, peeled and sliced
  • 4 dried peaches, halved
  • 1 large yellow onion
  • 3 cloves garlic, minced
  • 1 teaspoon turmeric
  • 1/2 scant teaspoon ground cinnamon
  • 1/2 scant teaspoon ground cardamom
  • 1 teaspoon brown sugar
  • 2 tablespoons freshly squeezed lime juice
  • Salt and pepper to taste

Steps

  • Heat 3 tablespoons olive oil in a pan and sauté onion until lightly browned.
  • Add the garlic and turmeric and cook for another 2 minutes.
  • Add the chicken and salt and pepper, and cook briefly to combine.
  • Stir in the dried peaches and cardamom.
  • Add water to cover the chicken, and bring to a boil, and the simmer for 40 minutes.
  • Heat a couple tablespoons of olive oil in a skillet and sauté the peach slices, a couple minutes on each side.
  • Add the peaches to the chicken, along with the cinnamon, lime, and sugar.
  • Simmer, covered, for another 20 or so minutes.
