Khoresh-e Holu
Ingredients
- 1 batch seitan chicken
- 4 firm, slightly underripe peaches, peeled and sliced
- 4 dried peaches, halved
- 1 large yellow onion
- 3 cloves garlic, minced
- 1 teaspoon turmeric
- 1/2 scant teaspoon ground cinnamon
- 1/2 scant teaspoon ground cardamom
- 1 teaspoon brown sugar
- 2 tablespoons freshly squeezed lime juice
- Salt and pepper to taste
Steps
- Heat 3 tablespoons olive oil in a pan and sauté onion until lightly browned.
- Add the garlic and turmeric and cook for another 2 minutes.
- Add the chicken and salt and pepper, and cook briefly to combine.
- Stir in the dried peaches and cardamom.
- Add water to cover the chicken, and bring to a boil, and the simmer for 40 minutes.
- Heat a couple tablespoons of olive oil in a skillet and sauté the peach slices, a couple minutes on each side.
- Add the peaches to the chicken, along with the cinnamon, lime, and sugar.
- Simmer, covered, for another 20 or so minutes.
