Seitan Bacon

Ingredients

  • 1/4 cup nutritional yeast
  • 3/4 cup cold water
  • 3 tbsp liquid smoke
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 2 tbsp BBQ sauce
  • 1 tsp black pepper
  • 2 tsp salt
  • 3 cloves garlic
  • 1 1/2 cup vital wheat gluten

Steps

  • In a food processor, combine all the ingredients except the gluten, and blend until very smooth.
  • Add the gluten and run the food processor until a ball of dough forms, scraping the sides as necessary.
  • Preheat the oven to 350 degrees F.
  • Knead the dough for 5 to 10 minutes, until very firm.
  • Press the dough into a slab, wrap in foil, and bake for 1 hour.
  • Store it in the fridge, and slice and fry whenever you so desire.
