Baked Orzo
Ingredients
- Olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 3 tablespoons tomato paste
- 1 red bell pepper, diced
- 1 bunch kale, chopped
- 2 teaspoons dried oregano
- A pinch of crushed red pepper
- 1 cup uncooked orzo
- A 14 ounce can of fire roasted diced tomatoes
- 1-2 cups broth
- Feta and dill, for topping
Steps
- Sauté the onion, and then add the garlic.
- Add the tomato paste and cook until a little caramelized.
- Add thepepper and kale, and cook until the kale is wilted.
- Add the orzo, canned tomatoes, chickpeas, and broth and bring to a simmer.
- Bake for 10-15 minutes, until the orzo is soft.
- Top with feta and dill.
