Baked Orzo

Ingredients

  • Olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 1 red bell pepper, diced
  • 1 bunch kale, chopped
  • 2 teaspoons dried oregano
  • A pinch of crushed red pepper
  • 1 cup uncooked orzo
  • A 14 ounce can of fire roasted diced tomatoes
  • 1-2 cups broth
  • Feta and dill, for topping

Steps

  • Sauté the onion, and then add the garlic.
  • Add the tomato paste and cook until a little caramelized.
  • Add thepepper and kale, and cook until the kale is wilted.
  • Add the orzo, canned tomatoes, chickpeas, and broth and bring to a simmer.
  • Bake for 10-15 minutes, until the orzo is soft.
  • Top with feta and dill.
