Steamed pumpkin buns

Ingredients

  • 500 grams Pau flour or all-purpose flour
  • 130 grams granulated sugar
  • 1 teaspoon baking powder
  • 1 tablespoon active dry yeast
  • 150 grams steamed pumpkin puree
  • 1 tablespoon vegetable shortening or coconut oil
  • 100 grams warm water

Steps

  • In the bowl of a stand mixer, combine the dry ingredients.
  • Using the dough hook, add the wet ingredients and knead until the dough is smooth, at least 10 minutes.
  • Divide the dough into 20 grams balls.
  • Roll five balls of dough into flat circles, and place them in a line with overlapping edges.
  • Press the overlapping edges together with the tines of a fork.
  • Roll up the line of circles into a flower shape.
  • Cut the roll in half to produce two flower-shaped buns.
  • Repeat with remaining dough.
  • Allow to prove in a warm place for 30 minutes.
  • Steam the buns in batches for 15 minutes, and allow to rest for 3 minutes unopened.
