Ingredients

4 large eggs, warmed in a cup of hot water for 10 minutes before cracking

340 g (1 1/2 cup) milk, at room temperature

3/4 tsp salt

180 g (1 1/2 cup) all-purpose flour

43 g (3 tbsp) unsalted butter, melted, plus softened butter for greasing pans
Steps
- Preheat the oven to 450 degrees F, and wait until the oven is hot to make the batter.`
- Generously grease muffin tin, including the space between the cups.
- Whisk together the eggs, milk, and salt until combined.
- Add the flour and whisk until frothy. Small lumps are okay.
- Scape the bowl and whisk again.
- Quickly whisk in the melted butter.
- Divide the batter into the muffin pan; the cups should be 2/3 to 3/4 full.
- Bake 20 minutes, then reduce heat to 350 degrees F and bake for another 10-15 minutes. Do not open the oven door.
- Serve hot, with lemon slices or lemon curd.
