One dozen popovers

Ingredients

  • 4 large eggs, warmed in a cup of hot water for 10 minutes before cracking
  • 340 g (1 1/2 cup) milk, at room temperature
  • 3/4 tsp salt
  • 180 g (1 1/2 cup) all-purpose flour
  • 43 g (3 tbsp) unsalted butter, melted, plus softened butter for greasing pans

Steps

  • Preheat the oven to 450 degrees F, and wait until the oven is hot to make the batter.`
  • Generously grease muffin tin, including the space between the cups.
  • Whisk together the eggs, milk, and salt until combined.
  • Add the flour and whisk until frothy. Small lumps are okay.
  • Scape the bowl and whisk again.
  • Quickly whisk in the melted butter.
  • Divide the batter into the muffin pan; the cups should be 2/3 to 3/4 full.
  • Bake 20 minutes, then reduce heat to 350 degrees F and bake for another 10-15 minutes. Do not open the oven door.
  • Serve hot, with lemon slices or lemon curd.
