Ingredients

365 g (2 cups) cooked chickpeas

250 g (1 cup) aquafaba or water

28 g (2 tbsp) canola oil

20 g (1/4 cup) nutritional yeast

10 g (1 tbsp) onion powder

7 g (2 tsp) garlic powder

5 g (2 tsp) poultry seasoning

14 g (2 tsp) salt

6 g (1 tsp) apple cider vinegar

255 g (1 3/4 cups) vital wheat gluten
Steps
- In a food processor, blend all the ingredients except the gluten until smooth.
- Blend in the gluten.
- Transfer the dough to a stand mixer and knead with the dough hook for 10 minutes, until the gluten forms strands.
- Wrap snuggly in two sheets of foil.
- Steam in the instant pot for 2 hours, at high pressure.
- Release the steam and allow to cool until it can be handled.
- Break apart the loaf with your hands into pieces of the desired size.
