Ingredients

  • 365 g (2 cups) cooked chickpeas
  • 250 g (1 cup) aquafaba or water
  • 28 g (2 tbsp) canola oil
  • 20 g (1/4 cup) nutritional yeast
  • 10 g (1 tbsp) onion powder
  • 7 g (2 tsp) garlic powder
  • 5 g (2 tsp) poultry seasoning
  • 14 g (2 tsp) salt
  • 6 g (1 tsp) apple cider vinegar
  • 255 g (1 3/4 cups) vital wheat gluten

Steps

  • In a food processor, blend all the ingredients except the gluten until smooth.
  • Blend in the gluten.
  • Transfer the dough to a stand mixer and knead with the dough hook for 10 minutes, until the gluten forms strands.
  • Wrap snuggly in two sheets of foil.
  • Steam in the instant pot for 2 hours, at high pressure.
  • Release the steam and allow to cool until it can be handled.
  • Break apart the loaf with your hands into pieces of the desired size.
