Balsamic Roasted Tomatoes

Ingredients

  • 2/3 cup balsamic vinegar
  • 1 tbsp brown sugar
  • 3-4 large ripe tomatoes
  • Some olive oil

Steps

  • Boil the balsamic vinegar and sugar in a saucepan until thick and syrupy.
  • Slice the tomatoes and lay them out in a pan.
  • Drizzle the tomatoes with olive oil and spoon or pour the syrup onto the tomatoes.
  • Roast at 250 degrees F for 2 hours.
