Rhubarb Crisp

Ingredients

  • 6 tbsp cold butter, cut into pieces, plus a little more to grease the pan
  • 2 1/2 - 3 lbs rhubarb, cut into 1 to 1/2 inch pieces
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 3/4 cup brown sugar
  • 1/2 cup all-purpose flour
  • Pinch salt
  • 1/2 cup rolled oats
  • 1/2 cup pecans, coarsely chopped

Steps

  • Preheat the oven to 375 degrees F, and grease a 9x9 baking pan with a little butter.
  • Toss the rhubarb with the white sugar, lemon juice, and lemon zest.
  • Mix the brown sugar, flour, and salt, and cut in the butter until the mixture resembles coarse crumbs.
  • Blend in the oats and pecans.
  • Spread the rhubarb mixture into the baking dish, and crumble the topping over the top.
  • Bake 40-45 minutes.
