Rhubarb Crisp
Ingredients
- 6 tbsp cold butter, cut into pieces, plus a little more to grease the pan
- 2 1/2 - 3 lbs rhubarb, cut into 1 to 1/2 inch pieces
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 3/4 cup brown sugar
- 1/2 cup all-purpose flour
- Pinch salt
- 1/2 cup rolled oats
- 1/2 cup pecans, coarsely chopped
Steps
- Preheat the oven to 375 degrees F, and grease a 9x9 baking pan with a little butter.
- Toss the rhubarb with the white sugar, lemon juice, and lemon zest.
- Mix the brown sugar, flour, and salt, and cut in the butter until the mixture resembles coarse crumbs.
- Blend in the oats and pecans.
- Spread the rhubarb mixture into the baking dish, and crumble the topping over the top.
- Bake 40-45 minutes.
